Creates a new checkout session without creating a Payment Intent. Uses the merchant's secret API key for authentication/authorization but does not persist it in checkout-api-go.
If you are building a new integration, we recommend using v2 (POST /v2/checkout_sessions) instead — new features are only supported on v2. For example, v2 currently supports pass-on fees.
